Bean Curd Mousse

Had a Great afternoon with Chef Vladimir Niza during Health Factory Live Cooking Demo. Amazed with Chef’s knowledge on Food and the science he shared behind Food. During the event, I was challenged by Chef to prepare a Vegan Mousse. I am Super Excited to share Vegan version of Mousse 🙂

Cooking Time – 20 mins, Makes 4 short-glasses

Ingredients :

  1. 200 gms Firm Bean Curd (Tofu)
  2. 50 gms Dark Chocolate Bar or Dark Chocolate Chips
  3. 50 gms Caramel or White Chocolate Bar or Chips
  4. 1 ½ Tbsp. Dates Syrup or Sugar syrup or Honey
  5. 4 Cashews (Optional), soak for 30 mins
  6. ½ Tsp. Cinnamon (Optional)

How to Prepare Vegan Mousse :

  1. Drain excess water from bean curd
  2. Dry Roast bean curd on a flame for 5 mins, to remove its rawness. You can skip this step, if you like eating it raw bean curd
  3. Remove from flame & allow it to cool
  4. Blend cooled bean curd and soaked cashews until you reach a creamy texture
  5. Now add dates syrup & cinnamon to it and blend until well incorporated
  6. Divide this batter into 2 separate bowls
  7. Microwave Dark & Caramel chocolate in 2 separate bowls @ high at an interval of 30 seconds. Do not keep chocolate bowl directly on flame as it might kill the flavor

You can use Bain-marie process for melting chocolate. For this, fill a pot with water and place it on Flame. Put chocolate in a bowl and place it over the pot filled with water. The steam will allow the chocolate to melt slowly

  1. Blend melted dark chocolate into 1st bowl of Tofu
  2. Blend melted caramel chocolate into 2nd bowl of Tofu

Trust me the mousse will not fall if turned upside down 🙂

How to Serve Vegan Mousse :

  1. Take short-glasses or bowls and keep in a tilted position to get diagonal visual effect
  2. Using a spoon or piping bag fill the glass first with dark chocolate and then with caramel
  3. Allow it to rest in refrigerator for 15 mins before serving Or, you can Serve it immediately if time pressed
