Had a Great afternoon with Chef Vladimir Niza during Health Factory Live Cooking Demo. Amazed with Chef’s knowledge on Food and the science he shared behind Food. During the event, I was challenged by Chef to prepare a Vegan Mousse. I am Super Excited to share Vegan version of Mousse 🙂
Cooking Time – 20 mins, Makes 4 short-glasses
Ingredients :
- 200 gms Firm Bean Curd (Tofu)
- 50 gms Dark Chocolate Bar or Dark Chocolate Chips
- 50 gms Caramel or White Chocolate Bar or Chips
- 1 ½ Tbsp. Dates Syrup or Sugar syrup or Honey
- 4 Cashews (Optional), soak for 30 mins
- ½ Tsp. Cinnamon (Optional)
How to Prepare Vegan Mousse :
- Drain excess water from bean curd
- Dry Roast bean curd on a flame for 5 mins, to remove its rawness. You can skip this step, if you like eating it raw bean curd
- Remove from flame & allow it to cool
- Blend cooled bean curd and soaked cashews until you reach a creamy texture
- Now add dates syrup & cinnamon to it and blend until well incorporated
- Divide this batter into 2 separate bowls
- Microwave Dark & Caramel chocolate in 2 separate bowls @ high at an interval of 30 seconds. Do not keep chocolate bowl directly on flame as it might kill the flavor
You can use Bain-marie process for melting chocolate. For this, fill a pot with water and place it on Flame. Put chocolate in a bowl and place it over the pot filled with water. The steam will allow the chocolate to melt slowly
- Blend melted dark chocolate into 1st bowl of Tofu
- Blend melted caramel chocolate into 2nd bowl of Tofu
Trust me the mousse will not fall if turned upside down 🙂
How to Serve Vegan Mousse :
- Take short-glasses or bowls and keep in a tilted position to get diagonal visual effect
- Using a spoon or piping bag fill the glass first with dark chocolate and then with caramel
- Allow it to rest in refrigerator for 15 mins before serving Or, you can Serve it immediately if time pressed
