Food Lovers ! Unite with me as we commence into Holiest months ๐ of Shravan, where many of us observes fasts on Monday. This year letโs twist the auspicious ๐ occasion by feasting ๐ while fasting with Homemade, Lip-smacking ๐, Guilt-free and Gluten-free recipes. Hereโs presenting Beet Cheesecake to beat the Heat and enjoy the fasts sin-free ๐
Preparation โ 30 mins, Chilling โ 2 hours, Makes 8 small cheesecakes (depending on the size of mold)
๐พ Ingredients list :
โ๏ธ 2 medium-sized Beetroot
โ๏ธ ยผ + ยผ cup Demerara Sugar (or any)
โ๏ธ 100 gms Cottage Cheese (Paneer)
โ๏ธ ยผ tsp Cinnamon Powder
โ๏ธ 2 tbsp Desiccated Coconut
โ๏ธ 2 tbsp Milk Powder (optional)
โ๏ธ 1 tsp Canola Oil
โ๏ธ Water to boil beetroot
โ๏ธ White chocolate to drizzle
โจ๏ธ How to make Beet Cheesecake :
Preparing Beetroot :
๐Pressure cook beetroot with little water, for 3-4 whistle or until itโs tender
๐ Once the steam settles open the pressure cooker and peel the skin and puree beetroot coarsely. Avoid runny puree else you may find it difficult to set in molds
๐ Heat a wok and roast pureed beetroot for 5-7 mins to evaporate the moisture
๐ Now add sugar and stir well till water dries out
๐ Add oil and roast for another 5 mins
๐ Finally add coconut, milk powder and cinnamon powder, stir for 5-7 mins
๐ Remove from flame and allow it to cool
Preparing Cheesecake :
๐ Puree cottage cheese and roast in a pan for about 7-10 mins to remove its moisture
๐ Add sugar and stir and cook until water evaporates and it starts to become a lump
๐ Remove from flame and allow it to cool
๐ฅ Chilling and Plating :
๐ฝTake greased silicone molds
๐ฝ Place a spoonful of cooked beetroot
๐ฝ Now, add a layer of cottage cheese (cheesecake)
๐ฝ Cover with another spoonful of pureed beetroot
๐ฝ Similarly, make remaining beetroot cheesecakes
๐ฝ Chill them for 2 hours
๐ฝ Take a Serving dish and demold the cheesecakes
๐ฝ Drizzle White Chocolate and indulge onto healthy Gourmet Cheesecakes and enjoy during fasting or even when not fasting ?
