Food Lovers ! Unite with me as we commence into Holiest months π of Shravan, where many of us observes fasts on Monday. This year letβs twist the auspicious π occasion by feasting π while fasting with Homemade, Lip-smacking π, Guilt-free and Gluten-free recipes. Hereβs presenting Beet Cheesecake to beat the Heat and enjoy the fasts sin-free π
Preparation β 30 mins, Chilling β 2 hours, Makes 8 small cheesecakes (depending on the size of mold)
πΎ Ingredients list :
βοΈ 2 medium-sized Beetroot
βοΈ ΒΌ + ΒΌ cup Demerara Sugar (or any)
βοΈ 100 gms Cottage Cheese (Paneer)
βοΈ ΒΌ tsp Cinnamon Powder
βοΈ 2 tbsp Desiccated Coconut
βοΈ 2 tbsp Milk Powder (optional)
βοΈ 1 tsp Canola Oil
βοΈ Water to boil beetroot
βοΈ White chocolate to drizzle
β¨οΈ How to make Beet Cheesecake :
Preparing Beetroot :
πPressure cook beetroot with little water, for 3-4 whistle or until itβs tender
π Once the steam settles open the pressure cooker and peel the skin and puree beetroot coarsely. Avoid runny puree else you may find it difficult to set in molds
π Heat a wok and roast pureed beetroot for 5-7 mins to evaporate the moisture
π Now add sugar and stir well till water dries out
π Add oil and roast for another 5 mins
π Finally add coconut, milk powder and cinnamon powder, stir for 5-7 mins
π Remove from flame and allow it to cool
Preparing Cheesecake :
π Puree cottage cheese and roast in a pan for about 7-10 mins to remove its moisture
π Add sugar and stir and cook until water evaporates and it starts to become a lump
π Remove from flame and allow it to cool
π₯ Chilling and Plating :
π½Take greased silicone molds
π½ Place a spoonful of cooked beetroot
π½ Now, add a layer of cottage cheese (cheesecake)
π½ Cover with another spoonful of pureed beetroot
π½ Similarly, make remaining beetroot cheesecakes
π½ Chill them for 2 hours
π½ Take a Serving dish and demold the cheesecakes
π½ Drizzle White Chocolate and indulge onto healthy Gourmet Cheesecakes and enjoy during fasting or even when not fasting ?
