⏰ Prep Time : 10 mins, 🍲 Air fry Time : 15 to 20 mins each for burger & patty, 🍴 Servings : 4 burgers
🌾Ingredients for Buckwheat Burger :
For Burger Bun
- Buckwheat flour : ½ cup
- Potato flour : ¼ cup
- Baking Powder : ½ tsp
- Baking Soda : ¼ tsp
- Sesame Seeds (black & white) : 1 tbsp each
- Pure Ghee /Canola Oil : 1 tbsp + ½ tsp for greasing
- Condiments : As per taste, I have used Rock salt & Black pepper powder
- Water : To make a thick batter
For Patty
- Samo rice (vrat rice) : ½ cup
- Cottage cheese : ¼ cup
- Baking Powder : ½ tsp
- Baking Soda : ¼ tsp
- Pure Ghee / Canola Oil : 1 tbsp + ½ tsp for greasing
- Condiments : As per taste
(I have used Rock salt, Black pepper powder, Cardamom powder, Fennel seeds powder, Ginger powder)
- Water : To make a thick batter
For Sour cream
- Curd : ½ cup
- Thick Cream : 2 tbsp
- Lemon Juice : 1 tsp
- Salt, White pepper powder : As per taste
For Salads
- Cucumber : 1 medium size each
- Tomato : 1 medium size
♨️ How to prepare Buckwheat Burger :
Burger Bun
- In a bowl sift buckwheat flour, potato flour, baking powder & baking soda
- Add condiments, oil & water, mix well to make a batter like consistency
- Grease silicon moulds and divide the mixture equally & sprinkle white sesame seeds
- Preheat air fryer @ 180° C for 5 mins
- Place the moulds in it & bake @ 140° C for 15 to 20 mins or until skewer comes out clean
- Remove cooked bun moulds from air fryer and let it cool on a wired rack
Patty
- In a bowl add samo rice, cottage cheese, baking powder and baking soda
- Add condiments, oil and water, mix well to make a batter like consistency
- Grease silicon moulds and divide the mixture equally
- Preheat air fryer @ 180° C for 5 mins
- Place in moulds & bake @ 140° C for 10 to 15 mins or until skewer comes out clean
- Remove cooked patty moulds from air fryer and let it cool on a wired rack
Sour-cream
- Hung the curd in a muslin cloth for 4 hours or you can hung and keep it overnight in fridge
- Next day you will get a thick curd with water separated. Perfect !
- Add cream, condiments, lemon juice to it and whisk gently. Sour-cream is ready
🍽 Assembling Buckwheat Burger :
- Burger should easily demould if cooked evenly, else use butter knife to loosen edges
- Thinly slice cucumber and tomato or any salad of your choice
- Slice the burger into 2 halves
- Generously apply sour cream on both the inner sides of the sliced burger
- On one-half of burger place sliced cucumber, patty and tomato
- Cover it with the other half of the burger
- Serve warm and enjoy the richness of gluten free burger
