⏰ Prep Time : 10 mins, 🍲 Air fry Time : 10 to 15 mins, 🍴 Servings : 6 servings, 20 papdi, 8 bhalle

🌾 Ingredients for Buckwheat Chaat :

For both bhalle & papdi

  • Potato flour                                        :               ¼ cup each
  • Baking Powder                                  :               ½ tsp each
  • Baking Soda                                        :               ¼ tsp each
  • Pure Ghee / Oil                                  :               1 tbsp + ½ tsp for greasing each
  • Condiments                                       :               As per taste

I have used Rock salt, Black pepper powder, Cardamom powder, Fennel seeds powder, Ginger powder)

  • Water                                                   :               To make a thick batter for bhalle & dough for papdi

Bhalle

  • Samo Rice                                           :               ½ cup

 Papdi

  • Buckwheat flour                               :               ½ cup

Garnish

  • Black Sesame Seeds                       :               1 tbsp
  • Curd                                                      :               1 cup
  • Orange strips                                     :               Few

♨️ Preparing Buckwheat Chaat :

Let’s make Bhalle first

  1. Grind samo rice in food processor to make a powder
  2. In a bowl add samo rice powder, potato flour, baking powder and baking soda, condiments, oil and mix well
  3. Pour little water to make a batter like consistency
  4. Grease silicon moulds and divide the mixture equally and sprinkle
  5. Preheat air fryer @ 180° C for 5 mins & place the moulds in it
  6. Air fry @ 140° C for 10 to 15 mins or until skewer or tooth-pick comes out clean
  7. Remove moulds from air fryer and let it cool on a wired rack

 

To make Papdi

  1. In a bowl sift buckwheat flour, potato flour, baking powder and baking soda
  2. Add condiments, oil and mix well
  3. Pour little water and form a soft dough, let it rest for 10 mins
  4. Thereafter, to roll the dough place it in a cling film and gently roll it thin
  5. Take a cookie cutter and cut into circles to form a papdi shape
  6. Now prick one side of the papdi with fork
  7. Take a baking tray and line the papdi
  8. Preheat air fryer @ 180° C for 5 mins & place the tray in it
  9. Air fry @ 140° C for 7 to 10 mins & flip in between
  10. Check with skewer or tooth-pick if it comes out clean remove from air fryer and let it cool

🍽 Assembling Buckwheat Chaat :

  1. Demould bhalle
  2. Take a bowl to gently whisk curd and add condiments to it
  3. Take a serving dish, break papdi into few pieces, place bhalle, dollop of curd
  4. Now, sprinkle sesame seeds and orange slice
  5. Serve it at room temperature and enjoy the goodness of homemade falahari chaat
