⏰ Prep Time : 10 mins, 🍲 Air fry Time : 15 mins, 🍴 Servings : 8 short glasses
🌾 Ingredients for Buckwheat Cheesecake transparent fruits :
Layer 1 : Cookies :
- Buckwheat : ½ cup
- Coconut flour : ¼ cup
- Coconut Milk powder : ¼ cup
- Baking Powder : ½ tsp
- Baking Soda : ¼ tsp
- Pure Ghee / Oil : 1 tbsp + ½ tsp for greasing each
- Cardamom Powder : ½ tsp
- Demerara Sugar : ½ cup
- Milk (any / dairy-free) : ¼ cup or enough to combine
Layer 2 : Cheesecake :
- White chocolate : ½ cup
- Thick Cream : ¼ cup
Layer 3 : Berries :
- Agar-agar strips : ¼ cup
- Water : 1 cup
- Demerara Sugar : ½ cup
- Berries : Of any choice
- Mint Leaves sprigs : To garnish
♨️ Preparing Buckwheat Cheesecake transparent fruits :
Layer 1 : Cookies :
- Sift buckwheat flour, baking soda & powder
- Now combine coconut flour & milk powder, cardamom powder, pure ghee, sugar and milk to form a dough
- Flatten the dough with a rolling pin, using cookie cutter cut it into cookies
- Prick the cookies using fork
- Grease a baking tray and line the cookies
- Preheat air fryer @ 180° C for 5 mins
- Place the tray and Air fry @ 140° C for 15 mins or until skewer comes out clean
- Remove baking tray from air fryer and let it cool for 5 mins
Layer 2 : Cheesecake :
- In a saucepan or microwave warm cream
- Add chocolate to it
- Gently mix until it dissolves
- Keep it in a refrigerator to allow it to cool
Layer 3 : Berries :
- In a saucepan soak agar-agar flakes in water for 20 mins but do not turn on heat
- Now place it on stove and add sugar
- Bring to boil and stir until agar-agar is fully dissolved
- Sieve the agar-agar water & let it come to room temperature
🍽 Assembling Buckwheat Cheesecake transparent fruits :
- Let’s start to layer by taking short glasses
- Crush the cookies & mix some ghee to make a soft pliable texture
- Place this first layer in the glasses and press it gently
- Now pour cheesecake mixture & freeze it for 15 mins
- Take the glasses out from freezer and place few berries
- Pour agar-agar water gently, ensuring it doesn’t break the cheesecake layer
- Place a mint sprig in each glass
- Refrigerate glasses for 3-4 hours or overnight
- Before you start to dig in, allow it to rest for 10-15 on kitchen counter and voila the ever tempting & mouth-drooling cheesecake is ready for you to indulge
