Buckwheat Donuts

⏰ Prep Time : 10 mins, 🍲 Air fry Time : 15-20 mins, 🍴 Servings : 8 donuts

🌾 Ingredients for Buckwheat Donuts :

  • Buckwheat flour                               :               ½ cup
  • Coconut flour                                     :               2 tbsp
  • Coconut Milk Powder (or any) :               2 tbsp
  • Demerara Sugar                                :               ½ cup
  • Cardamom powder                         :               1 tsp
  • Baking Powder                                  :               ½ tsp
  • Baking Soda                                         :               ¼ tsp
  • Nuts (optional)                                   :               1 tbsp
  • Water                                                       :               Enough to make a thick batter
  • Pure Ghee / Oil                                   :               2 tbsp + 1 tsp for greasing
  • Chocolate (any, white or milk)    :               ¼ cup
  • Chocolate sprinkles or nuts          :               2 tbsp

♨️ Preparing Buckwheat Donuts :

  1. In a bowl sift buckwheat flour
  2. Now combine remaining dry ingredients, coconut flour, coconut milk powder and nuts
  3. In a separate bowl, whisk lightly ghee / oil and sugar
  4. Gently fold dry ingredients and slowly add water to make a thick batter
  5. Add baking powder and baking soda and mix well
  6. Grease silicon moulds and divide the mixture equally
  7. Preheat air fryer @ 180° C for 5 mins & place the moulds in it
  8. Air fry @ 140° C for 15 to 20 mins or until skewer or tooth-pick comes out clean
  9. Remove moulds from air fryer and let it cool on a wired rack

🍽 Assembling Buckwheat Donuts :

  1. Donuts should easily demould if they are cooked evenly
  2. Melt the chocolate in microwave
  3. Dunk half of the donuts and remove excess chocolate by placing on a wired rack
  4. Garnish with chocolate sprinkle or nuts of your choice
  5. Take a serving dish and serve it warm or room temperature either ways it finger licking
