Cauliflower (Ghobi) Tacos

Healthy Food Lovers I hope you have now switched to healthy cooking and eating this Monsoons ?. Well, thinking what do I have in-store for you. Then, let me share my food experiment turning into a delight ?. Weekends most of us are short of Vegetables but luckily I had Cauliflower left in the Fridge ?. Wondering, what miracle could this veggie alone do ? . Well, it made me prepare a Mexican cuisine ?. Surprised ? not anymore. Join me to feast ? into #Cauliflower (Ghobi) Tacos ?  which is free from Oil/Butter, Cholesterol, 100% Vegan and a sumptuous, lip-smacking ? recipe to enjoy the rains ?. I loved experimenting with this veggie which is full of Omega-3 fatty acids and important to improve metabolism ?. Let me know what did you do with this amazing source of nutrients ?

Preparation – 15-20 mins, Baking – Not more than 15 mins for every taco, Makes 3-4 depending on size of tacos you decide to make

? Ingredients for Cauliflower (Ghobi) Tacos :

  1. 1 medium-sized Cauliflower
  2. 2 medium-sized boiled potatoes
  3. Few tbsp of Cornmeal (Makki-atta)
  4. Spices (Asafoetida, Black Salt, Fennel seeds powder, Coriander powder, Caraway seeds, Black Pepper powder, Turmeric Powder or any of of your choice)
  5. Assorted Herbs Thyme (optional)
  6. 100 gms of Bean Curd (Tofu) or any veggie
  7. 1 small chopped onion
  8. 1 small diced tomato
  9. 1 tsp of freshly squeezed Lemon juice (optional)
  10. Namkeen or crushed chips
  11. Few tbsp of Hung-curd
  12. Homemade Mint & Coriander spread or any of your choice

♨️ Preparing Cauliflower (Ghobi) Tacos :

  1. Wash and pulse cauliflower florets
  2. Microwave it 7-10 mins or until it’s tender
  3. Let it cool for 5 mins
  4. Now, drain the excess water such that you are left with a lump of cauliflower. Ensure to drain all the water else binding will be cumbersome
  5. Take a wok and drained cauliflower
  6. Grate potatoes and add all the spices and herbs
  7. Sauté for 5-10 mins to ensure excess water is evaporated
  8. Switch-off the flame & let it cool for 5 mins, so that you can hold it to make a dough
  9. Now gradually add cornmeal and start forming a dough of the mixture. Do not knead it hard else it will start to break. This dough would be very soft therefore handle with care ?
  10. Take an aluminium foil and place a small portion of the dough on it
  11. Flatten it evenly with your hands
  12. Preheat Airfryer @ 200 degrees C for 5 mins
  13. Now place the flatten taco into the airfryer
  14. Bake or air-fry it for 10 mins @ 180 degrees
  15. Remove the foil gently and flip it to bake for another 5 mins or until it’s cooked. You may use a skewer to check if it’s cooked thoroughly, else bake as required
  16. Bake the remaining tacos similarly
  17. Allow the cooked tacos to cool on a wired-rack for 10 mins
  18. Now roast tofu @ 200 degrees for 10 mins, then flip and roast again for 10 more mins

Alternatively, you can Microwave the tacos using the same settings while baking a Pizza

? Assembling / Presenting Cauliflower (Ghobi) Tacos :

  1. Take a bowl, add hung-curd, spread, spices, tofu, onion, tomato and lemon juice
  2. Toss it well ensuring all the ingredients coats tofu nicely ?
  3. Now, take a serving dish and place 1 taco
  4. Add the tofu mix and sprinkle some namkeen
  5. Fold the tacos and voila your 1st yummylicious sin-free taco is ready to for you to dig in. Enjoy this guilt-free tacos and impress your loved ones this season ?
