Coconut Cake

GLUTEN-FREE, No-Caking Agent used. Enjoy Nutty, Spongiest Coconut Cake ever, let’s celebrate French style Navratri

Prep / Cooking time-45 mins, Serves-4

Dry Ingredients :

  1. Dry-2 Cups freshly grated Coconut / Desiccated coconut powder
  2. 1 Tsp. Cardamom Powder
  3. 1/2 Tsp. Cinnamon Powder
  4. 1 Tsp. Cocoa Powder

Wet Ingredients :

  1. 1/2 cup Sugar
  2. 1/4 cup Milk
  3. Less than 1/4 cup Canola Oil

Grapes Decoction :

  1. Seedless Grapes
  2. 2 Tbsp. of Water
  3. 1 Tsp. Sugar.

For Layering :

  1. Vanilla Cappuccino Whipped Cream

How to prepare Spoongiest Cake :

  1. Dry roast Coconut powder, ensure no color change. Remove from pan & allow it to cool
  2. Skip the above step, if using dessicated coconut powder
  3. In a bowl whisk Wet elements
  4. Gently fold in dry ingredients into Wet mix
  5. Consistency will be crumbly and not runny, which is what we are looking for. The more moisture it has, the more time it will take to bake
  6. Grease a baking dish & Microwave @ High for 7 mins/until skewer comes out clean
  7. Allow it to cool

How to prepare Decoction :

  1. Blend Grapes & sieve it to separate Juice from pulp
  2. Discard pulp
  3. In a pan, pour the grapes juice
  4. Add water, sugar & stir well
  5. Bring it to 2 boil & remove from flame. Keep it aside to cool

How to Layer :

  1. Cut cake into 2 halves
  2. Take a Serving dish and place 1st layer of cake
  3. Pour decoction over it, just enough for cake to soak it. Do not pour excessive decoction
  4. Apply cream
  5. Place 2nd layer and pour little decoction
  6. Cover the cake with cream
  7. Coat the cake with freshly grated coconut for nutty flavor
  8. Chill for 3 to 4 hours or until the cake is set
  9. Enjoy with a cup of Coffee!!!
