Enjoy Vegan and Eggless Macaroons ready to munch in no time
Preparation – 10 mins, Refrigerate – 40 mins, Makes – 4 (depending upon the size/shape you choose)
Ingredients :
- ½ cup freshly Grated Coconut or desiccated coconut powder
- ¼ cup additional Coconut powder to roll the macaroons for the extra crunch
- ¼ cup All-purpose flour
- A pinch of salt (to balance the sweetness)
- ¼ tsp. Cinnamon Powder
- A pinch of Baking Soda
- ¼ tsp. Baking Powder
- ¼ cup Demerara Sugar or any sugar of your choice
- 2 tbsp. Canola oil or any vegetable oil or butter of your choice
- ¼ cup Milk (for binding)
How to Prepare Macaroons :
- Whisk sugar, oil & milk in a bowl
- Combine dry ingredients coconut powder, flour, salt, cinnamon powder, baking soda & baking powder, separately
- Now gently fold dry ingredients into wet
- Dough should be moist but not runny or thick. Add flour or milk depending upon how runny or thick it is
- Let it rest in fridge for 30 to 40 mins, thus allowing it to maintain it’s stiff shape
- Pre-heat Air-Fryer @ 180 degrees for 5 mins
- Grease a baking dish lightly with canola oil
- Make round balls or desired shapes of the prepared dough and roll it into remaining coconut powder
- Place balls in baking dish & bake it @ 160 degrees for 15 mins
- If you like Macaroons to be more crisper, flip the macaroons & bake @ 170 degrees for 10 mins. You can bake more depending upon how crisp you desire. Remember once left for cooling macaroons will harden itself, hence avoid over-baking
- With the help of a skewer or toothpick check if macaroons are cooked thoroughly
- Take out from air-fryer and allow it to cool
You can use the above instructions while baking Macaroons in Microwave. You might have to adjust the temperature & timings depending upon the Watts and Model of the electrical appliance you decide to use
How to Serve Coconut Macaroons :
- You can serve Coconut Macaroons at room temperature by drizzling Chocolate sauce & nuts
- Also, you can store it in air-tight container for a week and enjoy
