⏰ Prep Time : 20 mins, 🍲 Air fry Time : 20 mins, 🍴 Makes : 8 croissant, 2 samosa, 1 long puff & 2 chandrakala-gujiyas
🌾 Ingredients for Gujiya Puff pastry :
- 6 small Puff Pastry sheets
- 2 tbsp flour to roll sheets
- 1 tbsp each Canola Oil + vegan milk for brushing
Gujiya Filling :
- 1 tsp Pure Ghee
- Nuts roughly crushed any (I have used almonds, cashews, pistachios, hazelnuts, walnuts, cranberries, don’t chop-pumpkin seeds, sunflower seeds)
- 2 tbsp vegan Milk powder
- 2 tbsp Desiccated coconut powder
- 1 tbsp crushed makhanas / lotus seeds
- 2 tbsp dairy-free milk
- ¼ cup pitted dates
Garnishing :
- Nuts & desiccated coconut powder
♨️ Preparing Gujiya Puff pastry :
- Lets prepare filling in a pan, by lightly sauté all above listed ingredients on low flame except dates for 3-4 mins
- Remove from flame, add dates, give it a good mix and let it cool
- To make gujiya bites, combine 2 puff pastry sheets using a rolling pin, spread the filling & roll the sheet, secure the sides with a slurry, cut into equal parts just like cinnamon rolls
* Slurry is made with 1 tbsp flour + few drops of water
- To make chandrakala, using a cookie cutter cut round shapes from sheets, on 1 sheet place the filling in the middle, place another sheet on top of it & secure with slurry, press the sides gently with fork
- Combine canola oil & water and brush gently on all gujiya
- Preheat air fryer @ 180° C for 5 mins & place the gujiays in it
- Air fry @ 170° C for 25 mins, flip it mid-way and remove it on wired rack to cool
🍽 Assembling Gujiya Puff pastry :
- In a serving plate, place the gujiyas 😋 sprinkle nuts & desiccated coconut powder
- Serve warm or at room temperature & enjoy with loved ones 😍
