🌾 Ingredients for Gachak Cheesecake Tarts :
Tarts shell :
- ¼ cup pitted Dates
- ¼ cup mixed Nuts
- ½ tsp pure ghee
Cheesecake filling :
- 2 tbsp Semolina
- ¼ cup Ricotta cheese
- Few tbsp Milk (or dairy-free)
- 2 tbsp Coconut Milk/dairy-free powder
- ¼ cup White Sugar
- 1 tsp Pure Ghee
- 1 tsp Vanilla Essence
- ½ tsp Baking Powder
- ¼ tsp Baking Soda
Gajak / Peanut crumble :
- ¼ cup roasted Peanuts without skin
- ¼ cup Jaggery
- A pinch Cardamom Powder
Garnishing :
- Readymade frosting (Chocolate & Lemon)
- ¼ tsp White Sesame seeds
♨️ Preparing Gachak Cheesecake Tarts :
How to make Tart Shells :
- Chop dates finely and mix well with nuts & ghee, it should be slightly sticky mix
- Line tart moulds with greased parchment paper for easy unmoulding
- Put 2 tbsp of prepared mix on the parchment paper and press it evenly
- Preheat air fryer @ 150° C for 5 mins & place the tart shells in it
- Air fry @ 140° C for 7 mins to get a crunchy crust
- Remove moulds from air fryer and let it cool on a wired rack
Cheesecake filling :
- Finely grind semolina into a powder and remove in a bowl
- Now add all the ingredients mentioned above and mix well
- Add this over the crispy prepared tarts
- Then air fryer it again @ 140° C for 20 mins
- Insert toothpick to check if cheesecake is cooked and remove from air fryer and let it cool completely
Gajak / Peanut crumble :
- In a saucepan melt jaggery at low flame and cook for 5-7 mins
- Take water at room temperature and pour few drops of cooked jaggery
- Check if it breaks easily when you try to, else cook for another 1-2 mins and repeat the process of dropping jaggery drops to water to check its consistency
- Once it starts to break, immediately add gently crushed roasted peanuts and mix until well incorporated
- Remove the mix from stove on a silicon sheet and try to crush using a rolling pan, as it might be a little hot, so be careful
🍽 Assembling Gachak Cheesecake Tarts :
- Unmould the tarts
- Start pipping frosting and decorate the tarts, let your imagination lead
- Sprinkle some sesame seeds and gachak crumble and enjoy the delight with your loved ones
