🛒 Ingredients for Gajar Halwa Rolls :

For Dough :

  • 1 tsp Dry instant Yeast / सुखा खमीर (1 चम्मच)
  • 1 tbsp Sugar / चीनी (1 बड़ा चम्मच)
  • 1/3 cup lukewarm Water / 1/3 कप गरम पानी
  • 1/4 cup Canola Oil / 1/4 कप कैनोला तेल
  • 5 cups Maida (All-purpose flour) / 1.5 कप मैदा (ऑल-पर्पस आटा)
  • 1 tsp Cinnamon Powder / 1 छोटा चम्मच दालचीनी पाउडर
  • ½ tsp Salt / ½ छोटा चम्मच नमक

 

For Halwa :

  • 5 kgs grated Carrots / 1.5 किलो कद्दूकस की हुई गाजर
  • 150 gms grated Beetroot / 150 ग्राम कद्दूकस किया हुआ चुकंदर
  • 20 pitted Dates / 20 बीज निकाले हुए खजूर
  • 1/3 cup Water / 1/3 कप पानी

 

For Mawa :

  • 1 tbsp Pure Ghee / 1 बड़ा चम्मच शुद्ध घी
  • 3 tbsp Skimmed Milk / 3 बड़े चम्मच स्किम्ड दूध
  • 6 tbsp Skimmed Milk Powder / 6 बड़े चम्मच स्किम्ड मिल्क पाउडर
  • 1 tsp Cardamom Powder / 1 छोटा चम्मच इलायची पाउडर
  • 1 tsp Rose Water / 1 छोटा चम्मच गुलाब जल

 

For Garnishing :

  • Frosting, of any choice / अपनी पसंद की कोई भी फ्रॉस्टिंग
  • Popcorn (caramelized) / कैरेमलाइज्ड पॉपकॉर्न
  • Dried Rose Petals / सूखे गुलाब की पंखुड़ियां
  • Chopped nuts (any) / कटे हुए मेवे (आपकी पसंद के अनुसार)

 

♨️ Quick preparation steps Gajar Halwa Rolls :

  1. For Dough, combine above listed dough ingredients, knead it and proof for 3 hours.
  2. For Halwa, soften the carrots and beetroot in a pressure cooker and give it 2 whistles. Transfer to a wok to evaporate the water, should take 20 mins. Blend dates & water, add to wok and cook for another 7 mins. To make Mawa, whisk the listed ingredients and cook for 10 mins to form a paste. Now put in wok, add nuts and cook for another 7 mins. Halwa/carrots pudding is ready.
  3. To make Rolls, flatten the dough, spread generous amount of halwa, nuts, dried rose petals. Roll it lengthwise and slice. Place it in a greased tin.
  4. Preheat air fryer to 200°C for 5 mins. Place the tin and bake at 150°C for 25 mins.
  5. Once baked let it cool on a wired rack.

 

🍽 Assembling the Gajar Halwa Rolls :

  1. Place the rolls on a serving plate.
  2. Now apply generous amount of frosting.
  3. Garnish with popcorns, nuts and dried rose petals.
  4. Serve them warm or at room temperature, they taste yum.
