Festivals🎉 calls for feasts 😋 so why should we be left behind 🤔. Come with me 🤗 and gorge on this homemade, healthy and mouth-watering swiss rolls 😎 made up of carrots 🥕, cashews and pistachios
⏰ Prep Time : 10 mins 🍲 Cooking Time : 7-10 mins 🍴 Servings : 15-20 rolls
🌾 Ingredients for Gajar pak Swiss rolls :
- Gajar pak filling :
o 4 medium sized carrots, grated and boiled
o 1 tsp Coconut oil or any oil / ghee
o ½ cup dairy-free Milk powder or any
o ¼ tsp Cardamom powder
o 2-3 tbsp Sugar
o Beetroot water, for extra colour
o Crushed cashews for garnishing
- Cashews filling:
o 1 tsp Coconut or any oil
o ¼ cup dairy-free Milk or any
o ½ cup dairy-free Milk powder or any
o ½ cup coarsely / finely grinded Cashews
o 2-3 tbsp Sugar
o ¼ tsp Cardamom powder
o 1 tsp Saffron
- Pistachios filling :
o 1 tsp Coconut or any oil
o ¼ cup dairy-free Milk or any
o ½ cup dairy-free Milk powder or any
o 2-3 tbsp Sugar
o ½ cup coarsely grinded Pistachios
o ¼ tsp Cardamom powder
♨️ Preparing Gajar pak Swiss rolls :
We’ll start with Gajar pak filling :
- Take a wok to add boiled carrots and stir occasionally on medium-to-high flame
- Once water is evaporated, put some oil and stir for 1-2 mins
- Now add milk powder and cardamom powder, sauté for another min
- Add few drops of beet water for the right amount of colour you desire
- Remove in a bowl and allow it to cool
Let’s work on Cashews filling :
- Take a wok or kadai, pour oil or ghee and put it on medium flame
- Once it melts add milk and stir for a min
- Add milk powder and stir for 2-3 mins until the mixture combines together
- Put cashews and cardamom powder and stir until the paste forms a ball
- In the meanwhile, soak saffron and add to the mixture, once you find the right colour
- Remove from flame and let it cool
Now is the time to prepare Pistachio’s filling :
- Take a wok or kadai, pour oil or ghee and put it on medium flame
- Once it melts add milk and stir for a min
- Add milk powder and stir for 2-3 mins until the paste forms a ball
- Put pitachio’s and cardamom powder and roast for a min or two
- Remove from flame and let it cool
🍽 Assembling Gajar pak Swiss rolls :
- Take a cling film and roll length-wise gajar pak and keep it aside
- Roll cashews ball and flatten it length-wise
- Similarly, roll and flatten pistachio’s ball
- Over the pistachio’s sheet keep cashews paste and then gajar pak roll
- Wrap it along with cling film and let it cool in the refrigerator for 1-2 hours, or until it’s ready to cut into shapes
- Once it’s ready, take the roll and cut in desired shapes, though I have cut it length-wise 😊
- Feel free to garnish with nuts or any sprinkles of your choice
