Greek Gyro & Tzatziki sauce 🥙

Morning Healthy Food Lovers 😎 I am back with yet another healthy and Yummylicious 😋 gourmet recipe this Summer. Bet 😏 if after knowing the name you aren’t tempted to try it. Alright so roll your sleeves, wear chef hat 👩‍🍳👨‍🍳, turn on the air fryer and start cooking with me 🤩 ‘Greek Gyro with Tzatziki sauce’. Summers 🌞 means vacation time ⛳, less cooking and more enjoyment 🥳 but how when your kids, family & friends look up to you for tempting and flavoursome food 🤔. Here’s one quick recipe you can cook at leisure by not compromising on time spent with family and friends. Eat it as a wrap or stuff it in a pita – choice is yours 😎 either ways it tastes mesmerising !

Prep Time : 20 mins, 🍲 Baking Time : 15 mins, 🍴 Servings : 2 medium-sized bowls

🌾 Ingredients for Greek Gyro :

What you need for Pita bread :

  • 1 tsp instant dry yeast
  • ½ tbsp Demerara Sugar
  • ¼ cup luke-warm water
  • 1 cup All-purpose flour
  • ½ cup Wheat flour
  • 1 tsp Salt
  • 1 tbsp Canola Oil
  • ½ tsp Thyme

What you need for Kebabs :

  • ¼ cup boiled chickpeas
  • 100 gms Bean curd (Tofu)
  • 1 tsp Canola Oil
  • 1 clove of Garlic
  • 1 small diced Onion
  • 1 tsp grated Ginger
  • Spices (Asafoetida [a pinch], Salt [as per taste], ½ tsp each Black pepper, Fennel Seeds, Oregano, Thyme, Coriander powder)
  • Few crushed chips

What you need for Salad :

  • ¼ cup boiled chickpeas
  • 1 clove of Garlic
  • 1 small diced Onion
  • 1 small diced red Tomato
  • Spices (Salt [as per taste], ½ tsp each Black pepper, Fennel Powder, Oregano, Thyme)
  • 4 tbsp Black Olives (optional)

What you need for Tzatziki sauce :

  • 1 small cucumber
  • 1 tbsp Mayonnaise (eggless & dairy-free, optional)
  • Thick yogurt (any, dairy-free)
  • Spices (Salt [as per taste], Black pepper [a pinch], ½ tsp each Oregano, Thyme & Garlic powder)
  • 1 tsp Olive or canola oil

 

♨️ Preparing Greek Gyro :

Making of Pita bread :

  1. Dissolve yeast & sugar in water and set aside for 10 mins
  2. Once little froth is visible, add flours, spices & oil
  3. Knead either in stand mixer for 7 mins or with hands for roughly 10 mins
  4. Once the dough is soft, coat with slight oil, cover with a kitchen towel and let it rest for hours, preferably in a warm place
  5. After 2 hours, knead for 30 seconds and make small balls
  6. Roll the balls not too thick or thin, else pitas won’t puff
  7. Let it rest for another 30 mins
  8. Cooking in Air fryer :
    1. Pre-heat Ari Fryer @ 180° C for 5 mins
    2. Place pita in the air fryer basket and bake @ 160° C for 5 mins
    3. Flip and bake for 5 mins
    4. Remove from basket once cooked evenly, else bake as required
    5. Prepare the remaining pitas in the same manner
  9. Cooking on a gas stove :
    1. Take a non-stick pan and heat it
    2. On a medium flame, place the pita
    3. Flip the bread once slight bubbles are formed
    4. Gently press the bread to allow the air in the bread circulate evenly and thus, allowing the bread to puff nicely
    5. Flip it again to ensure all the sides are evenly cooked
    6. Remove from the pan, likewise, prepare the remaining pitas

 Making of Kebabs :

  1. In a non-stick pan, heat oil
  2. Add asafoetida, sauté garlic
  3. Once garlic is slight brown, add onions and stir for 5 mins at medium flame
  4. Add grated ginger and cook for another 5 mins
  5. Add chickpeas, crumbled bean curd, spices & sauté for 2-3 mins
  6. Remove from flame and let it cool
  7. Once cooled, make small kebabs and coat into chips for extra crunchy layer
  8. Cooking in Air fryer :
    1. Pre-heat Ari Fryer @ 180° C for 5 mins
    2. Slightly coat oil on kebabs and place in air fryer basket to bake for 10 mins
    3. Flip and bake again for 7 mins
    4. Once kebabs are crispy, remove from basket and bake remaining similarly
  9. Cooking on a gas stove :
    1. Take a non-stick pan and heat it with little oil
    2. Place the kebabs and cook on low heat for 10 mins
    3. Flip and cook for another 10 mins
    4. Once evenly cooked remove in a plate

 

Making of Salad :

  1. In a non-stick pan, heat oil
  2. Add asafoetida, sauté garlic & onions for 5 mins at medium flame
  3. Add tomato and cook for 2 mins
  4. Add chickpeas, spices & sauté for 2-3 mins
  5. Remove from flame and let it cool, once cooled add olives

 

Making of Tzatziki sauce :

  1. Grate cucumber and gently squeeze the water
  2. Place in a bowl, add yogurt, spices, mayo & stir well

🍽 Assembling of Greek Gyro :

  1. You can either cut the bread and fill it or eat as a wrap, either ways it tastes yum
  2. Cut the bread into 2, generously coat it with tzatziki
  3. Place 1 kebab, add salad and drizzle with tzatziki for that extra creaminess
  4. Else, take the bread, put some tzatziki, add kebab, salad, drizzle tzatziki and wrap it, secure with a toot-pick, if needed
  5. Take a serving plate, place Gyro and Tzatziki, serve either warm or cold and enjoy the Greek delicacy 🤗
