Healthy & Colorful Paapri-Bhalle Chaat

Celebrating UAE National Day with Zero Oil, Homemade & Healthy ‘Oats & Peas Paapri (Gluten-free Flat Bread), Beetroot Bhalle (Savory Donuts), Spinach Bhujia or Sev (Savory Snacks), Black Chickpeas & Thick Yogurt’. Who need artificial colors when we have healthy food and its natural colors. Delighted with the colorful magic !!!

Preparation – 10 mins (if below ingredients are prepared a day in advance just like I did J to enjoy my breakfast), Makes – 4 small Jars

Ingredients to prepare Healthy Chaat :

  1. Oats Paapri (flat bread)
  2. Beetroot Bhalle (savory donuts)
  3. Spinach Bhujia or sev (savory snacks)
  4. Chickpeas (Brown)
  5. Mint & Coriander Spread
  6. Savory Yogurt
  7. ¼ cup roasted peanuts
  8. Few tbsp. of Dates syrup
  9. Nuts (optional)

Ingredients for Oats Paapri (flat bread) :

  1. 1 cup boiled & mashed Peas
  2. 1 ½ cup Oats (churn to make it a flour)
  3. Very little Water to knead
  4. 1 tbsp. Canola Oil or any oil
  5. Condiments (Asafoetida, Black Salt, Fennel seeds powder, Coriander powder, Caraway seeds, Black Pepper powder)
  6. ¼ tsp. Baking Soda

How to Prepare Oats Paapri (flat bread) :

  1. Knead a soft dough by combining all the above ingredients
  2. Let it rest for 15 mins
  3. Now roll the dough with the help of a rolling pin & cut round-shapes using cookie cutter
  4. Prick both the sides with the help of a fork. Thus, ensuring it doesn’t fluff while baking
  5. Pre-heat Air Fryer @ 180 degrees for 5 mins
  6. Place the prepared paapris shape in air fryer & bake for 7 mins @ 180 degrees. Bake for another 3 mins in case paapris aren’t crisp. Remember they turn crisper while they cool. Therefore, avoid over-baking
  7. Remove from air-fry once they are crisp

You can store this in an air-tight container, do not refrigerate & it will stay crisp

Ingredients for Beetroot Bhalle (Savory donuts) :

  1. ¼ cup Split Black gram Lentils (soaked for 2 hours & churned coarsely)
  2. ¼ cup boiled & mashed Beetroot
  3. Very little Water
  4. 1 tbsp. Canola Oil or any oil
  5. Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
  6. ¼ tsp. Baking Soda

How to prepare Beetroot Bhalle (Savory donuts) :

  1. Churn together all the above ingredients , except Baking soda; making it a smooth batter, not so runny or thick
  2. Pre-heat Air Fryer @ 180 degrees for 5 mins
  3. Brush oil to a baking dish
  4. Add baking soda to the batter & mix well
  5. Immediately transfer to baking dish
  6. Bake it for 15 to 20 mins @ 170 degrees or until skewer comes out clean
  7. Remove from air-fry & allow it to cool

Ingredients for Spinach Bhujia or sev (savory snacks) :

  1. ¼ cup blanched Spinach (pressure cook for 1 whistle to kept it’s color intact)
  2. 2 cups Gram Flour (known as garbanzo bean flour or chickpeas flour)
  3. ¼ cup Mint Leaves
  4. 8 to 10 Curry Leaves
  5. 1 tsp. Lemon Juice
  6. Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
  7. ¼ tsp. Baking Soda

How to make Spinach Bhujia or sev (savory snacks) :

  1. Knead all the above ingredients to make it a soft dough
  2. Take a Sev maker and add the dough to it
  3. Grease an aluminum foil & start making bhujia on it through sev maker
  4. Pre-heat Air Fryer @ 180 degrees for 5 mins
  5. Bake the sev for 10 to 15 mins @ 170 degrees. Flip in-between to ensure it’s baked from all the sides
  6. Remove from air-fry & allow it to cool. It becomes crisper during cooling process

Ingredients for Chickpeas (Brown) :

  1. ¼ cup chickpeas
  2. 1 tbsp. Canola Oil
  3. Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
  4. A pinch of Baking Soda

How to make Chickpeas (Brown) :

  1. Soak chickpeas overnight
  2. Pressure cook for 25 mins & keep it on low flame for 15 mins
  3. Pressure cook more until they are tender
  4. In a steel wok add little oil & condiments. Add little water & mix well
  5. Now add boiled chickpeas and baking soda
  6. Cover the pan & Cook at low flame for 15 mins. Keep stirring every 5 mins to ensure water do not evaporate from the wok. If it evaporates, add little water
  7. Turn-off the flame & allow it to cool. Within an hour or so you will find Brown chickpeas turning black

Ingredients for Mint & Coriander Spread :

  1. ½ cup Coriander Leaves
  2. ½ cup Mint Leaves
  3. Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
  4. 1 small Red Onion
  5. 1 small Tomato
  6. 2 Garlic
  7. 1 tsp. Ginger

How to prepare Mint & Coriander Spread :

  1. Churn the above in a blender or mixer
  2. Add water to achieve a smooth paste
  3. You can refrigerate in an air-tight container & it will stay for a week

Ingredients for savory Yogurt :

  1. 1 cup Yogurt
  2. Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
  3. Mint & Coriander spread

How to make savory Yogurt :

  1. Whisk well all the above ingredients ensuring no lumps

How to Serve Healthy Chaat :

  1. Take serving Jars or Glass or you can prepare it in a plate just like traditional chaat
  2. Crush the paapris into 4 pieces & place it as 1st layer & add little yogurt to make it moist
  3. Place a layer of Bhalle & add little yogurt
  4. Add few chickpeas & yogurt
  5. Now add Bhujia, peanuts & yogurt
  6. Top it up with Dates syrup & Nuts & enjoy a healthy chaat
