Celebrating UAE National Day with Zero Oil, Homemade & Healthy ‘Oats & Peas Paapri (Gluten-free Flat Bread), Beetroot Bhalle (Savory Donuts), Spinach Bhujia or Sev (Savory Snacks), Black Chickpeas & Thick Yogurt’. Who need artificial colors when we have healthy food and its natural colors. Delighted with the colorful magic !!!
Preparation – 10 mins (if below ingredients are prepared a day in advance just like I did J to enjoy my breakfast), Makes – 4 small Jars
Ingredients to prepare Healthy Chaat :
- Oats Paapri (flat bread)
- Beetroot Bhalle (savory donuts)
- Spinach Bhujia or sev (savory snacks)
- Chickpeas (Brown)
- Mint & Coriander Spread
- Savory Yogurt
- ¼ cup roasted peanuts
- Few tbsp. of Dates syrup
- Nuts (optional)
Ingredients for Oats Paapri (flat bread) :
- 1 cup boiled & mashed Peas
- 1 ½ cup Oats (churn to make it a flour)
- Very little Water to knead
- 1 tbsp. Canola Oil or any oil
- Condiments (Asafoetida, Black Salt, Fennel seeds powder, Coriander powder, Caraway seeds, Black Pepper powder)
- ¼ tsp. Baking Soda
How to Prepare Oats Paapri (flat bread) :
- Knead a soft dough by combining all the above ingredients
- Let it rest for 15 mins
- Now roll the dough with the help of a rolling pin & cut round-shapes using cookie cutter
- Prick both the sides with the help of a fork. Thus, ensuring it doesn’t fluff while baking
- Pre-heat Air Fryer @ 180 degrees for 5 mins
- Place the prepared paapris shape in air fryer & bake for 7 mins @ 180 degrees. Bake for another 3 mins in case paapris aren’t crisp. Remember they turn crisper while they cool. Therefore, avoid over-baking
- Remove from air-fry once they are crisp
You can store this in an air-tight container, do not refrigerate & it will stay crisp
Ingredients for Beetroot Bhalle (Savory donuts) :
- ¼ cup Split Black gram Lentils (soaked for 2 hours & churned coarsely)
- ¼ cup boiled & mashed Beetroot
- Very little Water
- 1 tbsp. Canola Oil or any oil
- Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
- ¼ tsp. Baking Soda
How to prepare Beetroot Bhalle (Savory donuts) :
- Churn together all the above ingredients , except Baking soda; making it a smooth batter, not so runny or thick
- Pre-heat Air Fryer @ 180 degrees for 5 mins
- Brush oil to a baking dish
- Add baking soda to the batter & mix well
- Immediately transfer to baking dish
- Bake it for 15 to 20 mins @ 170 degrees or until skewer comes out clean
- Remove from air-fry & allow it to cool
Ingredients for Spinach Bhujia or sev (savory snacks) :
- ¼ cup blanched Spinach (pressure cook for 1 whistle to kept it’s color intact)
- 2 cups Gram Flour (known as garbanzo bean flour or chickpeas flour)
- ¼ cup Mint Leaves
- 8 to 10 Curry Leaves
- 1 tsp. Lemon Juice
- Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
- ¼ tsp. Baking Soda
How to make Spinach Bhujia or sev (savory snacks) :
- Knead all the above ingredients to make it a soft dough
- Take a Sev maker and add the dough to it
- Grease an aluminum foil & start making bhujia on it through sev maker
- Pre-heat Air Fryer @ 180 degrees for 5 mins
- Bake the sev for 10 to 15 mins @ 170 degrees. Flip in-between to ensure it’s baked from all the sides
- Remove from air-fry & allow it to cool. It becomes crisper during cooling process
Ingredients for Chickpeas (Brown) :
- ¼ cup chickpeas
- 1 tbsp. Canola Oil
- Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
- A pinch of Baking Soda
How to make Chickpeas (Brown) :
- Soak chickpeas overnight
- Pressure cook for 25 mins & keep it on low flame for 15 mins
- Pressure cook more until they are tender
- In a steel wok add little oil & condiments. Add little water & mix well
- Now add boiled chickpeas and baking soda
- Cover the pan & Cook at low flame for 15 mins. Keep stirring every 5 mins to ensure water do not evaporate from the wok. If it evaporates, add little water
- Turn-off the flame & allow it to cool. Within an hour or so you will find Brown chickpeas turning black
Ingredients for Mint & Coriander Spread :
- ½ cup Coriander Leaves
- ½ cup Mint Leaves
- Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
- 1 small Red Onion
- 1 small Tomato
- 2 Garlic
- 1 tsp. Ginger
How to prepare Mint & Coriander Spread :
- Churn the above in a blender or mixer
- Add water to achieve a smooth paste
- You can refrigerate in an air-tight container & it will stay for a week
Ingredients for savory Yogurt :
- 1 cup Yogurt
- Condiments (Asafoetida, Black Salt, Fennel seeds powder, White pepper powder, Coriander powder)
- Mint & Coriander spread
How to make savory Yogurt :
- Whisk well all the above ingredients ensuring no lumps
How to Serve Healthy Chaat :
- Take serving Jars or Glass or you can prepare it in a plate just like traditional chaat
- Crush the paapris into 4 pieces & place it as 1st layer & add little yogurt to make it moist
- Place a layer of Bhalle & add little yogurt
- Add few chickpeas & yogurt
- Now add Bhujia, peanuts & yogurt
- Top it up with Dates syrup & Nuts & enjoy a healthy chaat
