Healthy Halloween Cheesecake

Healthy Food Lovers 😃 this Halloween I decided to make a dessert but my Husband being health conscious barred me from using Sugar 😱. Exactly Dessert without Sugar 😲, what am I going to prepare bland food 🙄. Many thoughts starting pouring stating use jaggery or dates syrup, but I could use none since they will make the dessert brown 😖. Worried me 😕 enters the Kitchen and to my surprise I found frozen strawberries 😏 a perfect sweetener for my no bake dessert 😋. Woohoo… I am ready to make a Healthy Halloween Cheesecake 😋 which is 100% vegan, healthy, delicious and ready in no time

⏰ Prep Time : 20-30 mins, 🍲 Freeze Time : 4-5 hours, Overnight preferable, 🍴 Servings : 2 cheesecakes

🌾 Ingredients for Vegan Halloween Cheesecake :

  • What makes a good Crust ?

o   8 seedless Dates

o   10 whole Almonds

o   Few Pili Nuts

o   Or any nuts of your choice

o   Few drops of Coconut oil

 

  • Cheesecake is made up of ?

o   ½ cup Cashew nuts (soak for 30 mins)

o   2-4 tbsp Honey, as per taste

o   ¼ cup frozen Strawberries

o   ¼ cup Ricotta cheese

o   Few drops of Cardamom extract

o   ¼ cup Agar-agar flakes

o   1 cup Water, to soak agar-agar

o   Coconut oil, to grease the moulds

 

  • Spooky Toppings ?

o   ¼ cup Frozen Strawberries

o   1 tbsp Honey

o   Water to sprinkle

 

♨️ Preparing Vegan Halloween Cheesecake :

  1. Take a heavy bottom pan and soak agar-agar flakes into water
  2. Leave it aside for 20 mins. Do not switch-on the flame yet
  3. Lets’ prepare the curst. For this you need to grind dates, almonds, pili nuts and coconut oil
  4. Curst mixture It should be crumbly yet be able to combine it together but not sticky
  5. If it’s sticky increase the dried nuts of your choice
  6. Grease the detachable moulds with coconut oil. I have used heart shapes moulds for spooky effect 😈
  7. Spread the crust mixture on the moulds and press it evenly with finger tips or spoon
  8. Now place it into freezer to freeze (not more than 20 mins)
  9. Remember we had soaked agar-agar 😉, let us now place that pan on stove at high flame
  10. Once it starts to boil, reduce the heat and cook at medium flame for 15 mins or until agar-agar flakes are completely dissolved
  11. In the meanwhile, blend together cashew nuts, frozen strawberries, honey and ricotta cheese into a smooth paste
  12. Check if agar-agar is liquefied, if so sieve this water mix into a bowl and transfer it back to pan to place it on stove at medium flame
  13. Take the cashews and pour into water mix
  14. Cook for another 3-5 mins to allow the batter to incorporate thoroughly with water mix
  15. Remove the cheesecake mix from flame and add cardamom extract
  16. Mix it well and allow it sit on kitchen counter for 2-3 mins
  17. Take the crust from freezer
  18. Pour this cashews batter on the crust
  19. Leave it on counter to let it come at room temperature
  20. Once it’s cooled place it in refrigerator overnight for better results else, keep it at least for 3-4 hours if time-pressed

🍽 Assembling Vegan Halloween Cheesecake :

  1. Take a heavy bottom pan and place the frozen strawberries
  2. Cook for 4-5 mins with honey and sprinkle some water, if required
  3. When you see, the strawberries are softened, remove from flame and allow it to cool
  4. Take the cheesecake from the refrigerator and pour the strawberry sauce for spooky effect 😈 and for extra sweetness 😋
