Healthy Food Lovers! With festive season 🙏 around, my family & friends 🤗 expects me to cook 👩🍳 innovative & finger-licking recipes 😋. So, I decided to wear my chef hat 👩🍳 but it struck me I ran out of exotic ingredients 😲 & was left with #Idli batter. Woops 😐! But there I saw my #airfryer 😍 & I started experimenting with flavours. Guess what 🤓 I have list of Yummylicious Idli Platter 👌 ranging from ‘Idli #Tikka shots’, ‘Idli Pizza’, ‘Idli Muffin’ to ‘Idli Jalebi’. Follow 👇 step-by-step guide to know how to win hearts 💕 of your loved ones 🤗 from an ordinary idli batter.
⏰ Prep Time : 5 mins, 🍲 Baking Time : 10 mins, 🍴 Servings : Platter for gathering of 4
🌾 Ingredients for Assorted Idlis :
- 500 ml readymade Idli batter
🌾 Ingredients for Coconut dip :
- 2 tsp Canola oil
- Spices (Asafoetida, Salt, Fennel seeds powder, Cloves powder, Black pepper powder)
- 100 gms grated fresh Coconut
- 10 Curry leaves
- 1 tbsp Channa dal
- 1 tbsp Urad dal
- 2 tbsp Yogurt
🌾 Ingredients for Idli Tikka / shots :
- ¼ cup roughly chopped Bell Peppers
- Spices (Asafoetida, Salt, Fennel seeds powder, Cloves powder, Black pepper powder)
- 2 tbsp Coconut dip
- 1 tsp White and Black Sesame seeds each
- 2 slices of roughly chopped Pineapple
- ¼ cup finely chopped Bell Peppers
- 4 tbsp Yogurt
- 2 tbsp eggless mayonnaise
🌾 Ingredients for Idli Pizza / Muffin :
- 2 tbsp Coconut dip
- 1 tbsp Green and Black sliced Olives each
- ¼ cup finely chopped Bell Peppers
- 2 tbsp Mozzarella cheese
🌾 Ingredients for Idli Jalebi :
- 4 tbsp Sugar
- 4 tbsp Water
- 2 tbsp powdered Sugar
- 1 tsp Cardamom powder
♨️ Preparing Coconut dip :
- In a non-stick pan heat oil, add channa dal & cook for 5 mins
- Add spices, coconut, curry leaves & cook for 5 mins
- Remove from flame & let it cool
- Now add this mixture & grind with yogurt & 1-2 tbsp of water into a coarse texture
- Remove in a bowl
- Let’s make the tadka, take a non-stick pan add oil, asafoetida, urad dal & cook for 5 mins
- Add curry leaves, cook for a min & remove from flame
- Pour tadka on the cooked coconut batter & delicious dip is ready to gorge
🍽 Preparing of Idli Tikka / shots :
- Preheat air fryer @ 160° for 5 mins
- Grease silicon mould or air fryer basket which is an additional attachment
- Pour 1-2 ladle of idli batter to it & bake @ 140° for 10 mins
- Remove from basket & let it cool
- Dice into small pieces
- Let’s begin with marination, mix yogurt, mayonnaise & spices well
- Add chopped idlis, pineapple, bell peppers, mix well & keep it aside for 15 mins
- Take few toothpicks & stack marinated idli, pineapple, bell peppers & sprinkle sesame seeds
- In a preheated air fryer bake stacked tikka @ 170° for 10 mins
- Remove from air fryer
🌾 Preparing for Idli Pizza / Muffin :
- Preheat air fryer @ 160° for 5 mins
- Grease silicon mould or air fryer basket which is an additional attachment
- Pour 1-2 ladle of idli batter to it & bake @ 140° for 10 mins
- Remove from basket & let it cool
- On cooked idli sheet, spread coconut dip, bell peppers, olives, grated cheese & bake @ 140° for 7 mins
- Remove from air fryer basket
- For pizza muffin, grease silicon mould, pour idli batter top it with bell peppers, bake @ 140° for 10 mins
- Remove from air fryer once cooked
🌾 Preparing for Idli Jalebi :
- Take the idli batter, add sugar, mix well & pour in squeezy bottle
- We’ll make sugar syrup, in a pan heat sugar, water, cardamom, boil for 3-4 mins & it’s ready
- In a pan heat oil, start making jalebi by drizzling the batter
- Cook for 4 mins in total by flipping after 2 mins, once crisp remove & dip in sugar syrup for 30 seconds, flip it in between
- Remove & let it cool
🍽 Assembling of Assorted Idlis :
- Take a serving plate, arrange idli tikka, sprinkle sesame seeds & serve with coconut dip
- Now have shot glasses, add coconut dip & arrange idli tikka
- Place Pizza on a serving plate, demould muffins along, serve with coconut dip
- Also, serve crisp Idli jalebi along and enjoy with loved ones
