Kaju pista Sushi rolls

Indian festivals 🎉 are generally known to be celebrated with a wide variety of heavily buttered and deep-fried meals 😳. This makes health-conscious people avoid attending such occasions 😒. Well, here’s a solution 👍. Prepare with me #glutenless #guiltless #butterless mouth-watering desserts 😋 which is made-up of carrots and nuts and presented in the form of Sushi 😎 . Oh yeah… why should snacks have all the fun 😉

 

⏰ Prep Time : 10 mins 🍲 Cooking Time : 7-10 mins 🍴 Servings : 15-20 rolls

 

🌾 Ingredients for Kaju pista Sushi rolls :

  • Gajar pak filling :

o   4 medium sized carrots, grated and boiled

o   1 tsp Coconut oil or any oil / ghee

o   ½ cup dairy-free Milk powder or any

o   ¼ tsp Cardamom powder

o   2-3 tbsp Sugar

o   Beetroot water, for extra colour

o   Crushed cashews for garnishing

 

  • Cashews filling:

o   1 tsp Coconut or any oil

o   ¼ cup dairy-free Milk or any

o   ½ cup dairy-free Milk powder or any

o   ½ cup coarsely / finely grinded Cashews

o   2-3 tbsp Sugar

o   ¼ tsp Cardamom powder

o   1 tsp Saffron

 

  • Pistachios filling :

o   1 tsp Coconut or any oil

o   ¼ cup dairy-free Milk or any

o   ½ cup dairy-free Milk powder or any

o   2-3 tbsp Sugar

o   ½ cup coarsely grinded Pistachios

o   ¼ tsp Cardamom powder

 

♨️ Preparing Kaju pista Sushi rolls :

We’ll start with Gajar pak filling :

  1. Take a wok to add boiled carrots and stir occasionally on medium-to-high flame
  2. Once water is evaporated, put some oil and stir for 1-2 mins
  3. Now add milk powder and cardamom powder, sauté for another min
  4. Add few drops of beet water for the right amount of colour you desire
  5. Remove in a bowl and allow it to cool

 

Let’s work on Cashews filling :

  1. Take a wok or kadai, pour oil or ghee and put it on medium flame
  2. Once it melts add milk and stir for a min
  3. Add milk powder and stir for 2-3 mins until the mixture combines together
  4. Put cashews and cardamom powder and stir until the paste forms a ball
  5. In the meanwhile, soak saffron and add to the mixture, once you find the right colour
  6. Remove from flame and let it cool

 

Now is the time to prepare Pistachio’s filling :

  1. Take a wok or kadai, pour oil or ghee and put it on medium flame
  2. Once it melts add milk and stir for a min
  3. Add milk powder and stir for 2-3 mins until the paste forms a ball
  4. Put pitachio’s and cardamom powder and roast for a min or two
  5. Remove from flame and let it cool

🍽 Assembling Kaju pista Sushi rolls :

  1. Take a cling film and flatten gajar pak, cashews and pistachio’s ball as a sheet
  2. Start stacking the sheets one over the other, as per your colour preference
  3. Though, I have kept first cashews sheet, then pistachio’s and finally gajar pak
  4. Wrap it along with cling film and sushi mat for the sushi effect 😉 and let it cool in the refrigerator for 1-2 hours, or until it’s ready to cut into shapes
  5. Once it’s ready, take the roll and cut in desired shapes, though I have cut it in sushi-style 😊
  6. Feel free to garnish with nuts or any sprinkles of your choice or you can have it as-is, it will taste awesome irrespective of how you garnish
