Kesari & 🍓 Fruits Modak

Celebrate with me this auspicious occasion with Zero oil, Zero butter, 100% Vegan, Heavenly, Mouth-watering, Quick and Easy Modaks 😍 . Here’s presenting ‘Kesari Modak’ and ‘Fruits Modak’ 🍓. Oh yeah ! Preparation – 10-15 mins for every Modak, Baking – 7-10 mins for every 5 Donut Modaks, Makes – for a perfect occasion

🌾 Ingredients for Kesari and Fruits Modak :

  1. ½ + ½  cup desiccated Coconut Powder
  2. 2 + 2 tbsp Coconut Milk Powder (or any)
  3. 2 + 2 tbsp Condensed Milk (or use Sugar and Vegan Milk)
  4. 1 tbsp Coconut Milk (or any)
  5. Few strands of Saffron
  6. 10-12 blended Strawberries (or any fruit of your choice)
  7. ½ tsp Cardamom extract
  8. Crushed Nuts (optional)

🌾 Ingredients for Donuts Modak :

  1. 1 tsp instant Dry Yeast
  2. Less than ¼ cup of Water
  3. 2- tbsp Demerara Sugar (or any)
  4. 1 cup Wheat flour
  5. 1 tbsp Canola oil (optional)
  6. 1 tsp Cinnamon Powder
  7. Melted White and Dark Chocolate
  8. Crushed Nuts (optional)

♨️ Preparing Kesari and Fruits Modak :

  1. Infuse saffron in milk for 10-15 mins
  2. In a pan, dry roast coconut powder for 5 mins at low flame. Ensure to keep stirring else it will start turning to brown color
  3. Switch-off flame and let it cool
  4. Transfer / divide the powder it into 2 bowls
  5. For Kesari Modak :
    1. In 1st bowl add saffron milk, half of milk powder and condensed milk
    2. Mix until well incorporated
  6. For Strawberries Modak 🍓 :
    1. In 2nd bowl add strawberries, remaining half of milk powder and condensed milk
    2. Mix well
  7. Try to create a ball out of these batter, if you are able to then you are ready to prepare Modaks 😋

♨️ Preparing Donuts Modak 🍩 :

  1. In a bowl add luke-warm water, yeast and sugar
  2. Mix well and let it ferment for 15-20 mins or until you find bubbles forming on the surface
  3. Gradually add flour, oil and cinnamon powder and knead a soft dough
  4. Let the dough rise for 2-3 hours. I generally keep it in a Microwave as it allows the dough to risen faster, of course with switch-off 😇
  5. Once risen, knead for another 2 mins and make small balls out of it
  6. Flatten it and put some nuts
  7. Bring the edges together and start to twist the ball to give it a Modak shape
  8. Let it rest for another 30 mins
  9. Preheat Air Fryer for 5 mins @ 200 degrees
  10. Now place the modaks in the airfryer basket for 5-10 mins @ 180 degrees and flip in between
  11. Likewise prepare all other Modaks

In place of Airfryer you can bake in Microwave or OTG and bake at the same settings as you do while baking Donuts

🍽 Assembling / Presenting all Modaks :

  1. For Kesari and Strawberries Modak :
    1. Take a small ball size portion of kesari batter and flatten it
    2. Put some nuts and form a ball
    3. Now give any shape of your choice. I have given it a triangle shape and pinched the sides firmly with fingers for Modak effect
    4. Repeat the same for strawberries batter
  2. For Donuts Modak :
    1. Cover the top of the Modak with White or Dark chocolate
    2. Sprinkle nuts
  3. Take a serving plate and serve any these yummylicious varieties of Modaks and enjoy with your loved ones 😍
