Thinking 🤔 of what made me come-up with this idea. Well, her it goes… being a wife of a health-conscious husband, I am always encouraged to cook food which is good-looking, tasty and healthy. This festive season while I was sharing my childhood memories with my husband 🤗 he said how he ensured to avoid having #Mathri because of its deep-fried nature. Surprise I was, since Mathri’s taste is simply unforgettable . Well what next, I took it as a challenge and decided to make a healthier and guilt-free version. Hence, I decided to switch-on air fryer and let my kitchen be filled with baked mathri fragrance 😇
⏰ Prep Time : 5-7 mins, 🍲 Resting Time : 30 mins 🍴 Servings : 10-12 small mathris
🌾 Ingredients for Khasta Glazed Mathri :
What makes a Khasta / Moist & crunchy mathri ?
o ½ cup Wheat flour
o ½ cup Semolina
o ½ cup All-purpose flour
o 1 tbsp Coconut oil to knead and grease mathri
o Salt, as per taste
o A pinch of Baking soda and powder
o Water as needed
For Glazing ?
o White chocolate
o Milk or any chocolate
♨️ Preparing Khasta Glazed Mathri :
- Combine the dry ingredients flours, salt, baking soda and powder
- Add oil and make a nice crumble out of it. This ensure oil is incorporated with flour
- Start kneading the dough by pouring little water at a time, as the dough needs to be hard and not soft
- Let it rest for 30 mins
- After resting knead the dough for a min and flatten it with a rolling pin
- Take a cookie cutter of your choice and make mathri shapes
- Pre-heat the air fryer for 5 mins @ 160° C
- Lightly grease the mathri to avoid it being hard
- Place in air fryer basket and air fryer for 10 mins @ 140° C
- Flip the mathri and bake for another 10 mins @ 150° C, or until it’s cooked
- Remove the mathris and cook likewise
🍽 Assembling Khasta Glazed Mathri :
- Melt both the chocolates 🍫
- Take a serving dish and place the mathris
- Dip in and drizzle the chocolate and serve it at room temperature to enjoy its moistness 😋
