Kunafa / Fenia cheesecake 🍮

Healthy Food lovers can’t decide menu for Karva Chauth sargi 🙏. Try Kunafa / Fenia cheesecake 🍮 (aka vermicelli) & enjoy a perfect crunchy yet moist, sweet yet subtle, butter-free yet greasy, egg-free yet palatable dessert.

⏰ Prep Time : 10 mins, 🍲 Air fry Time : 15-20 mins, 🍴 Servings : 6-8 cheesecakes

🌾 Ingredients for Kunafa / Fenia cheesecake :

For Kunafa or Phenia :

  • Kunafa or Phenia                              :               2 cups
  • Canola Oil                                            :               ½ cup

For Cheesecake :

  • Ricotta cheese                                  :               1 cup
  • Cream (less fat)                                 :               ¼ cup
  • Baking Powder                                  :               1 tsp
  • Baking Soda                                        :               ½ tsp
  • Cardamom Powder                         :               1 tsp

For Sugar syrup :

  • Demerara Sugar                                :               1 cup
  • Water                                                   :               1 cup
  • Cardamom Extract                           :               Few drops

For Garnishing :

  • Nuts                                                      :               Any of choice

(I used pistachios and dried cranberries)

 

♨️ Preparing Kunafa / Fenia cheesecake :

  1. Take a bowl and break kunafa / fenia into small pieces, pour oil & mix it well
  2. Grease silicon moulds and spread some kunafa / fenia as a first layer
  3. For cheesecake, in a bowl add ricotta cheese, cream, cardamom powder, baking powder, baking soda and fold it nicely
  4. Spread the cheesecake mixture as a second layer on the kunafa / fenia
  5. Now cover it with another layer of kunafa / fenia
  6. Preheat air fryer @ 180° C for 5 mins
  7. Place the moulds in the air fryer & bake @ 140° C for 15-20 mins, until they are nicely firm
  8. Remove moulds from air fryer and let it cool
  9. Let’s make sugar syrup, by combining sugar & water in a saucepan, let it boil for 5 mins
  10. Remove from heat, add cardamom extract and allow it to be lukewarm

 

🍽 Assembling Kunafa / Fenia cheesecake :

  1. Demould once cooled completely to avoid kunafa / fenia cheesecake from breaking
  2. Place kunafa / fenia cheesecake on a serving plate & pour sugar syrup on top
  3. Sprinkle nuts and serve it warm or cold it tastes delicious either ways

Tip : You can prepare these a day before and refrigerate it until you are ready to gobble 😋
