🛒 Ingredients for Mammoul Modak cookies :
Maamoul Dough:
- 1 cup fine Semolina
- ½ cup All-purpose flour
- ¼ tsp Baking powder
- ½ tsp Cardamom Powder
- ½ cup melted Ghee or unsalted butter
- 1 tbsp Sugar
- ¼ cup milk warm or at room temperature
Pistachio and Date Filling:
- ½ cup ground pistachio
- 1 tbsp Ghee or unsalted butter
- ½ cup pitted Dates
♨️ Preparing Mammoul Modak cookies :
- Combine semolina, flour, baking powder, and cardamom in a bowl.
- Melt ghee or butter with sugar and whisk in milk.
- Add wet ingredients to dry ingredients and mix well. Cover and refrigerate for at least 30 minutes.
- Mash dates and mix with pistachios in a small bowl.
- Grease modak moulds and place a spoonful of filling in each.
- Press dough into moulds, seal edges, and place on a greased baking sheet.
- Preheat air fryer to 200°C for 5 minutes.
- Bake cookies for 20 minutes, flip, and bake for another 10-15 minutes.
- Let cookies cool before transferring to a wire rack.

- Once the cookies are out of the air fryer, let them cool completely on a wire rack.
- This allows them to firm up and become perfectly crispy on the outside and chewy on the inside.
