Mammoul Modak cookies

🛒 Ingredients for Mammoul Modak cookies :

Maamoul Dough:

  1. 1 cup fine Semolina
  2. ½ cup All-purpose flour
  3. ¼ tsp Baking powder
  4. ½ tsp Cardamom Powder
  5. ½ cup melted Ghee or unsalted butter
  6. 1 tbsp Sugar
  7. ¼ cup milk warm or at room temperature

Pistachio and Date Filling:

  1. ½ cup ground pistachio
  2. 1 tbsp Ghee or unsalted butter
  3. ½ cup pitted Dates

♨️ Preparing Mammoul Modak cookies :

  1. Combine semolina, flour, baking powder, and cardamom in a bowl.
  2. Melt ghee or butter with sugar and whisk in milk.
  3. Add wet ingredients to dry ingredients and mix well. Cover and refrigerate for at least 30 minutes.
  4. Mash dates and mix with pistachios in a small bowl.
  5. Grease modak moulds and place a spoonful of filling in each.
  6. Press dough into moulds, seal edges, and place on a greased baking sheet.
  7. Preheat air fryer to 200°C for 5 minutes.
  8. Bake cookies for 20 minutes, flip, and bake for another 10-15 minutes.
  9. Let cookies cool before transferring to a wire rack.

🍽 Assembling Mammoul Modak cookies :

  1. Once the cookies are out of the air fryer, let them cool completely on a wire rack.
  2. This allows them to firm up and become perfectly crispy on the outside and chewy on the inside.
