No-bake Chocolate Tofu Cheesecake

As we embark 2018, I wish all the Food Lovers a Very ๐ŸŽŠHappy New Year ๐ŸŽ‰. This year resolve to replace unhealthy food habits with healthy habits as I did in 2017 ๐Ÿค—. Cook with me healthy and tasty yet simple to make decadent ๐Ÿ˜Ž โ€˜No-bake Chocolate Tofu Cheesecakeโ€™. All you need is reduce Sugar with Dates and replace Cream Cheese with Bean Curd (or Tofu) ๐Ÿ˜‡. And enjoy a Sin-free, Oil-free, yeast-free, Lip-smacking, finger-licking and luscious cheesecake ๐Ÿ˜‹ in no time

โฐ Prep Time : 5-10 mins, ๐Ÿฒ Cook Time : 10-15 mins, ๐Ÿด Servings : A family for an occasion

๐ŸŒพ Ingredients for Choco-Tofu cheesecake :

  1. 200 gms Bean curd or Tofu
  2. 15-20 Cookies or crunchies (any)
  3. 1-2 tbsp Peanut butter
  4. 1 tbsp Cocoa powder
  5. 2 tbsp dairy-free Milk powder
  6. 1 sachet Vegetarian Gelatin
  7. Water as needed
  8. ยผ cup Demerara sugar
  9. Few chopped dates
  10. 1 tsp Cardamom extract
  11. For Garnishing :
    1. Strawberries & Blueberries
    2. White chocolate

โ™จ๏ธ Preparing for Choco-Tofu cheesecake :

  1. Grind cookies or crunchies in a food processor or crush them using a rolling pin
  2. Mix melted peanut butter until the mixture starts to combine together
  3. Take a detachable pie dish and cover with cling film. This will allow you to lift the cheesecake without breaking it
  4. Spread cookies / crunchies ย mixture on the pie dish and level it evenly
  5. Place it in refrigerator for 10-15 mins to allow it to set
  6. Dissolve gelatin as per the instructions given in the pack you are using
  7. Take a wok or pan and dry roast crumbled / mashed tofu for 5-10 mins on a medium flame. Ensure to stir occasionally to avoid tofu getting over-roasted
  8. Add chopped dates, milk powder, cardamom extract and sugar
  9. Cook for another 10-15 mins on a low-medium flame
  10. Remove from flame and allow it to cool for 5 mins
  11. Blitz in the food processor to make it a smooth puree like batter
  12. Transfer it to a pan and put it on flame
  13. Now add soaked gelatin and mix the batter until we combined
  14. Remove from flame and allow it to cool at the kitchen counter
  15. Pour the batter over the cookies mixture and refrigerate until itโ€™s set

๐Ÿฝ Assembling / Presenting for Choco-Tofu cheesecake :

  1. Once the cheesecake is set, gently demold from the pan
  2. Place it on a serving dish
  3. Drizzle white chocolate and spread few fresh fruits of your choice
