Morning Healthy Food Lovers ! just like you I have also been planning how to make this weekend exciting 😏. I thought lets bake a cake 👩🍳 it’s been long I did one 🙄. Just when all my prep and baking was done my Husband gives me a challenge – what can you make out of this cake 😎. Yeah I was in deep thoughts 🤔 and I said swiss roll or cupcakes or brownies, he said make something without cream 😲. Yikes, I knew our tummies will growl 😱 if breakfast is not served soon. Fear of growling made me crumble my cake 😅 and here’s what I got an idea 😉. Let’s make Granola in #airfryer 😎 now that’s a challenge well achieved. ⏰ Prep Time : 20 mins, 🍲 Baking Time, Cake : 30 mins and Granola : 15 mins, 🍴 Servings : 4 – 6 glasses
🌾 Ingredients for Parfait – an island of fruits :
- ¾ cup Semolina
- ¾ cup regular Oats
- 2 tbsp Canola oil
- ¼ tsp Baking Soda
- ½ tsp Baking Powder
- ¾ cup regular Sugar (avoid Brown sugar)
- 1 tsp Cinnamon powder
- 1½ cup Milk (you can opt for dairy-free)
- Greek yogurt (or any)
- Any Sliced Fruits (I used Kiwi, Figs & Peach)
- Nuts (optional)
♨️ Preparing Parfait – an island of fruits :
- We’ll prepare the cake first by sifting all dry ingredients
- Gradually add milk and whisk such that no lumps are formed
- In the meanwhile, pre-heat the air fryer @ 160° C for 5 mins
- Grease the baking pan and pour batter into it
- Bake it @ 140° C for 25-30 mins, check with skewer to ensure its cooked evenly
- Once cake is baked remove from air fryer and let it stand for 10 mins
- Let’s demould it and allow it to rest for 30 mins or until it’s completely cooled
- Now grind the cake using a blade mixer or coarsely crush with hands to resemble like crumble
- Pre-heat air fryer @ 160° C for 5 mins
- Place the cake crumble into a baking dish and bake @ 160° C for 10-15 mins
- Remember to stir the crumble every 5 mins to avoid over-browning
- Once you find half of the crumble is crunchy, take the dish from air fryer
- Transfer this Granola to a plate
- During its cooling process Granola will become more crunchier, hence advisable to bake less
🍽 Assembling Parfait – an island of fruits :
- Take serving glass (I used ice-cream bowls) and make the 1st layer with granola
- Put a dollop of yogurt and add generous amount of fruits
- Repeat the layer of granola, yogurt and fruits
- Finally top it with granola and nuts
