Merry Christmas🎄food lovers. Enjoy egg-free, gluten-free, sugar-free 🍰 Plum Cake baked in 𝗔𝗶𝗿 𝗙𝗿𝘆𝗲𝗿. It’s dense texture, loaded with nuts is a must to try this festive season ☃️.
⏰ Prep Time : 5 mins, 🍲 Air fry Time : 30 mins, 🍴 Makes : 1 loaf
🌾 Ingredients for Plum Cake :
- 1 cup Oats
- 4 tbsp melted White Chocolate
- ½ tsp Baking Soda
- 1 tsp Baking Powder
- Few tbsp water / milk / dairy-free milk
- 1 tsp Cardamom Powder
- 2 tbsp Canola Oil
- ¼ cup Pineapple juice
- ¼ cup Nuts (any)
- 1 tbsp Jaggery
- 1 tsp Butter for greasing cake mould
- 1 tbsp Pineapple jam for shinning coating on cake
- 1 tsp Coconut powder to sprinkle
♨️ Preparing Plum Cake :
- Start with overnight soaking of chopped nuts into pineapple juice, put some jaggery along.
- Pulse oats into fine powder & transfer to soaked nuts & mix well.
- Incorporate melted chocolate, cardamom powder, canola oil, baking powder & baking soda.
- If batter is thick then add milk gradually, batter should be sticky and not runny.
- Garnish with nuts.
- Preheat air fryer @180° C for 5 mins.
- Grease cake mould, pour batter & bake in air fryer @140° C for 30 mins.
- Check with skewer if cooked then remove from air fryer.
🍽 Assembling Plum Cake :
- While cake is warm brush pineapple jam for shining extra.
- Demould after 30 mins so cake hold its shape nicely.
- Sprinkle Coconut powder & cut into desired shapes.
- You can enjoy it warm or at room temperature either way it tastes amazing 😋.
Useful Tips :
- Add little milk at a time to avoid cake batter becoming runny.
- If you like your cake crispy then cook for another 5-10 mins.
