⏰ Prep Time : 20 mins, 🍲 Air fry Time : 20 mins, 🍴 Makes : 6-8 small kachoris

🌾 Ingredients for Rachori (Raj Kachori) :

Raj kachori and papri ingredients :

  • 1 cup Wheat flour
  • 2 tbsp Semolina
  • 1 tsp Baking Soda
  • Condiments (Salt, Black Pepper powder, Fennel powder, coriander powder, chaat masala, caraway seeds)
  • ½ tsp Baking soda
  • 4 tbsp Pure Ghee
  • Water to knead
  • 2 tbsp Canola Oil for brushing

 Coriander & Mint Dip :

  • ¼ cup Mint leaves
  • ¼ cup Coriander leaves
  • ¼ cup onion
  • ¼ cup tomato
  • Few drops of cold Water
  • Condiments (Salt + Black Pepper powder)

 Garnishing :

  • 1 cup thick yogurt mix with 2 tbsp Powdered sugar
  • Dates Syrup
  • Namkeen (of your choice)
  • ¼ cup Salted boondi
  • Fruits (🍓 Berries or Kiwi or any of you choice)

 

♨️ Preparing Rachori (Raj Kachori) :

To make Raj kachori and papri :

  1. Combine the above listed ingredients and knead well, let it rest for 30 mins
  2. Keep ¾ part of dough for raj kachori and ¼ for papri
  3. Make 6 mid-sized balls from raj kachori dough and flatten it a little with palms
  4. Flatten papri dough & cut small rounds with a cookie cutter, prick with fork (to avoid puffing)
  5. Brush kachori balls and papri with canola oil
  6. Preheat air fryer @ 150° C for 5 mins & place the kachori balls in it
  7. Air fry @ 150° C for 20 mins, flip it mid-way and remove it on wired rack
  8. Now air fry papri @ 150° C for 10-12 mins, flipping it mid-way, once done remove it & cool

To prepare dips :

  1. In a mixing jar, grind the above ingredients and remove in a bowl
  2. Consistency should be runny hence, adjust water accordingly

 

🍽 Assembling Rachori (Raj Kachori) :

  1. In a tall glass or serving bowl, take a kachori balls and break the top shell to insert filling
  2. Put in crushed papri, some namkeen, sweetened yogurt
  3. Repeat these steps once again
  4. Drizzle mint dip, dates syrup, salted boondi & serve, nothing can beat its yum taste 😋
