🥕Scorched Rice🍚🌿

Hey Healthy Food Lovers, on 🇮🇳 Republic Day lets make multi-color & mutli-flavor recipe 🍚 Scorched Rice using 🥕 carrots & 🌿 fresh herbs no food colours used. Its gluten-free, crunchy, sweet & tangy flavors, are a delight 😋 to relish for.

⏰ Prep Time : 20 mins, 🍲 Air fry Time : 15 mins, 🍴 Servings : 2-3

🌾 Ingredients for Scorched Rice :

Orange Layer :

  • Canola Oil : 1 tbsp
  • Garlic : 1 small
  • Chopped Onions : 1 small
  • Condiments (Asafoetida, Salt, Turmeric, White Pepper)
  • Whole Spices 1 each (Green Cardamon, Black Cardamon, Clove, Cinnamon stick)
  • Cooked Basmati Rice : ¼ cup
  • 🥕 Carrot : 1 medium size
  • 🍅Tomato : 1 medium size

Green Layer :

  • Canola Oil : 1 tbsp
  • Garlic : 1 small
  • Chopped Onions : 1 small
  • 🌿Fresh herbs : Green Onions, Coriander leaves, Mint leaves
  • Condiments (Salt, White Pepper, Zaatar, Coriander powder, Fennel seeds powder, Thyme)
  • Whole Spices 1 each (Green Cardamon, Black Cardamon, Clove, Cinnamon stick)
  • Cooked Basmati Rice : ¼ cup
  • Beans : 10
  • Green Capsicum : 1 medium

White layer :

  • Cooked White Rice : ¼ cup

 Garnishing :

  • Desiccated Coconut Powder : 1 tsp
  • Dried Papaya : 1 tsp
  • Green Onion stem : 1 tsp
  • Blueberries : Few

♨️ Preparing Scorched Rice :

Orange Layer  🥕 🍅:

  1. Roughly chop carrot and cook at 1 whistle in a cooker
  2. Cool it and blend carrot with tomato into a fine puree
  3. On a stove, heat wok, add canola and cook garlic and onions until they are translucent
  4. Now add condiments & whole spices & cook for a minute
  5. Add the puree & cook until it becomes a thick paste
  6. Finally toss cooked rice and cook until coated nicely
  7. Remove in a bowl to cook it

Green Layer 🌿 :

  1. Roughly chop beans, capsicum & fresh herbs and cook at 1 whistle in a cooker
  2. Cool it and blend it into a fine puree
  3. On a stove, heat wok, add canola and cook garlic and onions until they are translucent
  4. Now add condiments & whole spices & cook for a minute
  5. Add the puree & cook until it becomes a thick paste
  6. Finally toss cooked rice and cook until coated nicely
  7. Remove in a bowl to cook it

🍽 Assembling Scorched Rice 🍚 :

  1. In a serving plate place a bowl or ring to shape the rice & spread an even layer of green rice
  2. Now spread a layer of white rice
  3. Finally with orange rice
  4. Preheat air fryer @ 180° C for 5 mins & place the plate in it
  5. Bake @ 170° C for 15 mins or until the top layer becomes crunchy
  6. Remove plate from air fryer and let it come at room temperature
  7. Garnish with chopped dried papaya, green onions & coconut powder & serve it warm
