Tapioca Mousse

NO Cream, Effortless, Silky-Rich Tapioca Mousse

Prep / Cooking/Presentation-30-40 mins, Serves-8 small glasses

Ingredients :

  1. 1/3 Cup soaked Tapioca over-night or soak for 6 hours
  2. 3 Cups Skimmed Milk
  3. 1/2 Cup Sugar
  4. 1 small Beetroot Boiled & Mashed
  5. 1 Tsp Cocoa Powder
  6. 2 Tbsp Hung-Curd
  7. 1 Tsp Cinnamon Powder
  8. 1 Tsp Vanilla Essence

For Garnishing :

  1. Low-fat cream
  2. Nuts
  3. Chocolate

How to prepare Tapioca Mousse :

  1. Add milk in a Heavy-Bottom pan & bring to 1 boil
  2. Add strained Tapioca & stir well
  3. Bring to 1 boil and reduce flame
  4. Stir every 2 mins to avoid it sticking to the pan
  5. It should be Translucent in 10 mins
  6. Else cook for more mins until it’s translucent
  7. Add sugar, Cinnamon and stir well
  8. Cook until it thickens.
  9. Remove from flame and & cool it
  10. Whisk hung-curd until soft peaks forms
  11. Gently fold in Tapioca and divide into 3 bowls
  12. Add Cocoa to 1st,  Beetroot to 2nd & Vanilla Essence to 3rd bowl & fold gently

How to arrange Layers :

  1. Let go the Artist in you
  2. Take a small serving glass & enjoy decorating by combining any colored Mousse
  3. Top with Nuts or Cream or Chocolate Flakes
  4. Enjoy Chill
