Preparation – 10 mins, Resting time – 15 mins, Makes – 4
?Ingredients for Dough :
- ½ cup Wheat Flour
- ½ cup Semolina
- Water to knead
- Spices (Salt)
- ½ tbsp Canola Oil
?Ingredients for Stuffing :
- 1 tsp Canola Oil
- 2 tbsp Water
- ½ cup boiled Kidney Beans
- ½ cup Bean Curd (or Tofu)
- 1 small piece of chopped Garlic
- 1 small chopped Onion
- 2 small blended Tomatoes
- ½ tsp grated Ginger
- Spices (Asafoetida, Salt, Coriander Powder, Black Pepper Powder, Fennel Seeds, Cumin Seeds, Caraway Seeds) or any of your choice
- Coriander/Mint chutney
- Coriander and Mozzarella cheese (optional) to garnish
How to Prepare ?:
- Dough preparation :
- Combine flour, semolina, salt, oil and gradually add water to make a soft dough
- Let it rest for 15 mins
- For stuffing :
- Put oil in a pan
- Once heated, add Garlic and stir until light golden brown
- Add onions and sauté until they are translucent
- Now add, ginger, tomatoes, spices, water and sauté for 2-3 mins until the oil leaves the edges
- It’s time to add kidney beans and tofu. Sauté for 5-7 mins
- Remove from flame and allow it cool
- Making of Enchiladas :
- Make small balls from dough
- Flatten the ball as thin as possible with a rolling pan
- While preparing on a stove use a non-stick pan to roast the bread from both sides until light brown, with Zero drop of Oil ?
- Alternatively use Air Fryer and skip 2 steps of roasting bread without and with stuffing ? How ? follow below :
- Spread the chutney and place stuffing on one side
- Roll the bread / enchiladas
- Preheat Air Fryer @ 200C for 5 mins
- Place enchiladas and air fry @ 180C for 5-10 mins and flip once in between
- Sprinkle cheese and air fry for 1-2 mins or until cheese melted
- On a non-stick pan roast the bread from both sides until light brown, with Zero drop of Oil ?
- Remove from pan and similarly prepare all the breads
How to Serve ?:
- Skip these steps if using Air Fryer :
- Take the bread and spread coriander/mint chutney
- Now add the stuffing at one side
- Roll the bread
- Roast it on a non-stick pan for 2-3 mins ensuring all the sides are slightly golden brown for that extra crunch ?
- Take a microwave safe plate and place the enchiladas and top it with mozzarella cheese
- Microwave for 1 min or until cheese melts
- Transfer to a serving dish and serve it hot with coriander sprigs… a quick and healthy International food ready for any ? occasion ?
