Wheat & Semolina Enchiladas

Often known for extra loaded cheese ? and high in calories. Not anymore… Prepare healthy and sumptuous Mexican Food by using healthy ingredients ? available in Kitchen ? Embrace with me a Guilt-free Mexican food and dump calories ?

Preparation – 10 mins, Resting time – 15 mins, Makes – 4

?Ingredients for Dough :

  1. ½ cup Wheat Flour
  2. ½ cup Semolina
  3. Water to knead
  4. Spices (Salt)
  5. ½ tbsp Canola Oil

    ?Ingredients for Stuffing :

  1. 1 tsp Canola Oil
  2. 2 tbsp Water
  3. ½ cup boiled Kidney Beans
  4. ½ cup Bean Curd (or Tofu)
  5. 1 small piece of chopped Garlic
  6. 1 small chopped Onion
  7. 2 small blended Tomatoes
  8. ½ tsp grated Ginger
  9. Spices (Asafoetida, Salt, Coriander Powder, Black Pepper Powder, Fennel Seeds, Cumin Seeds, Caraway Seeds) or any of your choice
  10. Coriander/Mint chutney
  11. Coriander and Mozzarella cheese (optional) to garnish

How to Prepare ?:

  1. Dough preparation :
    1. Combine flour, semolina, salt, oil and gradually add water to make a soft dough
    2. Let it rest for 15 mins
  2. For stuffing :
    1. Put oil in a pan
    2. Once heated, add Garlic and stir until light golden brown
    3. Add onions and sauté until they are translucent
    4. Now add, ginger, tomatoes, spices, water and sauté for 2-3 mins until the oil leaves the edges
    5. It’s time to add kidney beans and tofu. Sauté for 5-7 mins
    6. Remove from flame and allow it cool
  3. Making of Enchiladas :
    1. Make small balls from dough
    2. Flatten the ball as thin as possible with a rolling pan
    3. While preparing on a stove use a non-stick pan to roast the bread from both sides until light brown, with Zero drop of Oil ?
    4. Alternatively use Air Fryer and skip 2 steps of roasting bread without and with stuffing ? How ? follow below :
      1. Spread the chutney and place stuffing on one side
      2. Roll the bread / enchiladas
      3. Preheat Air Fryer @ 200C for 5 mins
      4. Place enchiladas and air fry @ 180C for 5-10 mins and flip once in between
      5. Sprinkle cheese and air fry for 1-2 mins or until cheese melted
    5. On a non-stick pan roast the bread from both sides until light brown, with Zero drop of Oil ?
    6. Remove from pan and similarly prepare all the breads

How to Serve ?:

  1. Skip these steps if using Air Fryer :
    1. Take the bread and spread coriander/mint chutney
    2. Now add the stuffing at one side
    3. Roll the bread
    4. Roast it on a non-stick pan for 2-3 mins ensuring all the sides are slightly golden brown for that extra crunch ?
    5. Take a microwave safe plate and place the enchiladas and top it with mozzarella cheese
    6. Microwave for 1 min or until cheese melts
  2. Transfer to a serving dish and serve it hot with coriander sprigs… a quick and healthy  International food ready for any ? occasion ?
